Best Beef Stew Recipe

Here is my absolute favorite beef stew recipe.
Preparation Time: 15-20 minutes, although it takes considerable time to cook
Difficulty: Easy
Feeds: Variable. I have not put the amounts of beef and vegetables you should use as it changes depending on how many people you are feeding.
Ingredients:
- Beef
- Onions
- Salt
- Pepper
- Herbs (I use basil and oregano, but you can use anything you like)
- Red chili (optional)
- Potatoes (these should be the dominant vegetable)
- Carrots
- Corn
- Peas
- Beans
Method:
- Cut the beef into nice small pieces
- Fill a large pot about three thirds full of water
- When the water begins to boil, add the beef, onion, salt and pepper to the pot
- Reduce the heat so that the mixture simmers
- Cover the pot with a lid and leave the mixture to simmer for 2 to 3 hours, stirring every half hour
- While you wait, peel the carrots and potatoes and prepare all the other vegetables
- Add the vegetables to the mixture after the simmering period, bring the mixture back to the boil (put the lid on the pot again), and then reduce it to a simmer again
- Cook for an hour
Other Tips:
- Some people enjoy some rice in their beef stew. Add it when you add the potatoes and carrots to the mixture
- You can thicken the mixture by adding some flour or cornstarch mixed with cold water. Add it right at the end of cooking, stirring it into the mixture for a few minutes
- Reheating leftover beef stew is easy! Just simmer the mixture in a large pot for about 30-40 minutes, or until the mixture is heated all the way through
- You could also add other meat to the mixture, such as bacon, or other vegetables
