Easy Potato Soup Recipe

It doesn’t get any easier than this recipe! When I found this recipe I thought it was too simple!
Serves: 1-2 people
Difficulty: Dead simple
Preparation Time: 5 minutes (at most!)
Ingredients:
- 4 large potatoes
- 1 onion
- 2 quarts (1.9L) of milk
- Salt
- Pepper
- 2 teaspoons of butter
Method:
- Peel the potatoes and onion and put them in a soup pot. Cover the vegetables in water and bring the pot to the boil.
- Continue boiling until the pot is nearly dry.
- Mash the potatoes and onion.
- Add the milk, butter, salt and pepper to the mashed vegetables.
- Strain and serve.
I told you that was easy!
Other Tips:
- You could add some cream to the soup for extra flavor.
- For a less basic recipe, you could add a few more vegetables or a few pieces of fried bacon.
- I love serving this soup with a piece of toast.
