Here is a simple recipe for making a fruity cheesecake.
Easy Fruity Cheesecake
Serves: 4-5 people
Difficulty: Simple
Preparation Time: 5-10 minutes
Ingredients:
- 1 cup of flour
- 2 and 1/4 cups powdered sugar
- 1/2 cup butter
- 1/4 cup of pecans (chopped)
- 8oz (225g) cream cheese
- 4oz (120g) whipped cream (or a non dairy substitute such as Cool Whip)
- 1lb (450g) can of blueberry pie filling
Method:
- Combine the flour, 1/4 cup of sugar, pecans and butter into a bowl and mix thoroughly. This makes the crust of the cheesecake.
- Pat into the bottom of a baking pan (9 x 13in or 23 x 33cm will be large enough)
- Bake this for 12 minutes at 350F (180C).
- Take the pan out of the oven at this time and allow it to cool.
- In another bowl, combine the cream cheese, whipped cream, and the remaining sugar (2 cups).
- Beat this mixture for 2 minutes.
- Now spread evenly over the top of the crust.
- Top with your fruit and then refrigerate the cake.
- Serve with a little whipped cream and some strawberries for a great tasting cheesecake.
Your friends will think you work hard to make it, when you have really only spent 10 minutes making it!
