Here is a simple recipe for making a fruity cheesecake.

Easy Fruity Cheesecake

Serves: 4-5 people

Difficulty: Simple

Preparation Time: 5-10 minutes

Ingredients:

  • 1 cup of flour
  • 2 and 1/4 cups powdered sugar
  • 1/2 cup butter
  • 1/4 cup of pecans (chopped)
  • 8oz (225g) cream cheese
  • 4oz (120g) whipped cream (or a non dairy substitute such as Cool Whip)
  • 1lb (450g) can of blueberry pie filling

Method:

  1. Combine the flour, 1/4 cup of sugar, pecans and butter into a bowl and mix thoroughly. This makes the crust of the cheesecake.
  2. Pat into the bottom of a baking pan (9 x 13in or 23 x 33cm will be large enough)
  3. Bake this for 12 minutes at 350F (180C).
  4. Take the pan out of the oven at this time and allow it to cool.
  5. In another bowl, combine the cream cheese, whipped cream, and the remaining sugar (2 cups).
  6. Beat this mixture for 2 minutes.
  7. Now spread evenly over the top of the crust.
  8. Top with your fruit and then refrigerate the cake.
  9. Serve with a little whipped cream and some strawberries for a great tasting cheesecake.

Your friends will think you work hard to make it, when you have really only spent 10 minutes making it!
